The island of La Palma, in the extreme northwest of the Canary Islands, is the rainiest and steepest, with an extinct volcano that reaches 2,400 meters of altitude. Throughout the island, from sea level and up to 2,000 meters, the goat herders practise transhumance, seasonally following the grass. Weekly cheese collectors pick, group, mature and sell them after two weeks of maturation. With DOP since 2001.
Young to semi-aged cheese, with a mild, milky, sweet and rich flavor, suitable to accompany red wines of short or medium aging.
