Castilian cheese is the classic aged ewe’s milk cheese that was ( and still is) handmade in the north Castilian plateau. Since the middle of the last century, a great brand developed its own technology that gave this classic a different texture, flavor and aroma. For the past 10 years, various Castilian artisan diaries, such as Granja Sardón, have been making it in small quantities.
It has a developed flavor, elegant but not extreme, with citrus and sharp notes, of soft friable texture and whitish yellow color. It pairs very well all kinds of wines, sherries and Cavas, as well as soft-bodied beers.
