The island of El Hierro, in the extreme southwest of the Canaries in the Atlantic Ocean, is the most uninhabited and wild island of the archipelago. All the farmers of El Hierro are dedicated to producing a fresh goat’s cheese to make the island’s famous quesadillas (goat’s cheese cakes) for local consumption. But dairy surpluses are collected by a cooperative cheese society, launched in March 1985, to make Herreño Tierno Y Ahumado, a mixed milk young cheese softly smoked with tabaiba (a weed from the island).
Very smooth and creamy with an smoky touch, it pairs very well with sweet white wines or with local Canary Islands wines.
