The Roncal valley, in the northeastern corner of Navarra, and in the Pyrenees, has historically been an eminently sheep-farming region that carries out annual transhumance (a practice of moving livestock from one grazing ground to another in a seasonal cycle, typically to lowlands in winter and highlands in summer) and is famous for the quality of its aged cheeses.
Of clean, deep and buttery flavor with notes of dried mushrooms that reflects the best of ewe's milk fed with mountain pastures. Pairs perfectly with young or medium aged red wines.
