The Afuega'l pitu, due to its spontaneous lactic coagulation and homemade preparation in the center of Asturias, is possibly the oldest cheese in Spain. Its original PDO, granted in 2004, didn’t allow for this young cheese to be made using raw milk. This cheesemaker has since created Rey Silo, following the old method, but using raw milk with two month ripening in the two original variations (white and red) and without the PDO.
Long and persistent flavor, with lactic and citrus backgrounds on a very creamy base. The red variant is flavored with sweet paprika and has an spicy touch. Perfect for cider, light beers and white wines.
