Picos
The other variant of picos, with olive oil and roasted sesame. Traditionally served with Spanish tapas.
HISTORY
When preparing picos at home, the children are often entertained by giving them some of the dough, with added roasted sesame, water and oil, to roll and cut into small squares. These “regañás” are then pricked and baked, before being given to the children to enjoy.
TASTING NOTES
Regañás are variants of picos with an addition of roasted sesame to the dough. Compared to picos they are more hydrated and contain more fat (6.5% of extra virgin olive oil and sunflower oil). They are toasted, crunchy and serve as shovels to collect soft cheeses, sauces, etc.
