The Region of Murcia is the cradle of one of the most important goat breeds in the world, the Murciana-Granadina goat. They are excellent milk producers and are now bred throughout Spain. It was also the birthplace of one of the new goat’s milk cheeses that has triumphed most in foreign markets, and that is now widely copied in other Spanish regions. An example is this goat’s milk cheese in wine made by Javier Muñoz in his artisan dairy.
It has a very smooth and creamy taste on the palate with the notes of red wine, thick and slightly sweet, with which its rind is repeatedly scrubbed. Therefore, there is nothing better than to pair it with than the same type of red wine, young, fruity and mouth-watering.
