The island of Gran Canaria is the most populated of the archipelago despite its mountainous terrain, mainly in the north and southwest. Throughout the island, a great quantity of all types of goat’s milk and mixed milk cheeses are produced in different maturations. The area of Pajonal, in the southwest of the island, is one of the highest quality. From here comes this artisanal mixed milk cheese that is matured in caves in Las Palmas de Gran Canaria. It is smeared with ‘gofio’ (roasted cornmeal) during its long ripening.
Developed and defined flavor, very buttery and with toffee, caramel and milk chocolate aromas and taste due to its exterior being smeared with gofio. It pairs very well with all kinds of young wines, both red and white.
