A typical medium-aged Spanish ewe’s milk cheese, with the most recognisable format: lateral with a plaited imprint of the esparto grass mould and the wheat stalk designed on the upper and lower faces.
HISTORY

The cylindrical design of the Manchego, Zamorano or Castilian cheeses, with the side in the form of zigzag obtained by the strap of esparto grass and the faces engraved with the recognizable "wheat stalk" is the hallmark of Spanish cheese. Historically it has been used throughout more than half of Spain in ewe’s, goat and mixed milk cheeses. They are from the pressed and uncooked pate family and their maturation variates from young to aged.

 
TASTING NOTES

Mild to medium taste, very pleasant and oily, with notes of nuts, dried mushrooms and hay. It goes well with all kinds of wines, sherries and beers.
