Finca Pascualete is a large agricultural and livestock farm with more than 800 years of history located very close to Trujillo (Cáceres). A farm with a herd of Merino sheep that produces all the milk to make a wide range of young to aged ewe’s milk cheeses. Among these are young cheeses with a white mold rind, flavored with natural black truffle.
Mild but developed flavor. Very creamy and melt-in-the-mouth, with notes of the black truffle appearing in tiny formats. Perfect to pair with Champagne, brut Cava or dry and aged sherry (Oloroso, Palo Cortado, Amontillado)
