Finca Pascualete is a large agricultural and livestock farm with more than 800 years of history located very close to Trujillo (Cáceres). A farm with a herd of Merino sheep that produces all the milk to make a wide range of young to aged ewe’s milk cheeses. Among these is the famous Extremaduran ewe’s milk tortas with raw Merino milk and authentic vegetable rennet in very small sizes. Due to the location where they are made being outside the area assigned to the PDO they cannot be protected by their quality mark. But this doesn’t seem to make any difference as they have won multiple international awards.
All the flavor and peculiarity of Extremadura ewe’s milk tortas but softer and in tiny formats. Perfect to drink with white wines, sherries and cava.
