HISTORY

Serrat means “closed, blind and compact” in Catalan, a cheese with pressed and uncooked pate of medium-to-long aging, that was produced in mountain farms to be stored. This Serrat is made with raw and whole cow's milk and reaches full aging at 10 months. A cheese in medium size that was first created in 1999 to celebrate the turn of the millennium, hence its name.

 
TASTING NOTES

Strong flavor, pronounced, slightly spicy and oily on the palate, , sandy and crumbly texture in the mouth with endings reminiscent ofold walnuts and mushrooms. It has pantry aromas and pairs very well with short to medium aging red wines.
