The great Sierra del Guadarrama is located to the north of Madrid. The Sierra is, wild and rugged, and gives its name to a goat’s breed that was in danger of extinction: the Guadarrameña goat. Since 1991, La Cabezuela cheese dairy has been working exclusively with milk from this indigenous breed, which is scarce but very fat and aromatic. Their first cheese was the Lingote Cremoso (creamy ingot) with an identifying shape. A lactic curd cheese with white mold rind.
Medium flavor, very creamy and melting on the palate, with lactic and citrus notes and raw mushroom backgrounds. It is advisable to pair it with fermented or barrel aged white wines, brut Cavas or with soft-bodied beers.
