Formerly, Manchego cheeses were stored in pantries with other products from the area such as the La Mancha saffron that would empart its flavor to all the products in the pantry. For this reason, more than ten years ago, this Manchego cheese maker decided to innovate the ewe's milk cheese by aromatizing and coloring them with an infusion of authentic Manchego saffron that gives them their defining color and aroma.
Very buttery and fatty, with a moderately elastic texture, where yellow-orange colors and saffron wood aromas predominate. It goes well with all types of white wines and dry and fruity sherries (Fino, Manzanilla and Amontillado), brut Cavas and soft-bodied beers.
