For several decades the Zamora family has been making pure goat’s milk artisanal cheeses in their dairy in Montefrío, in the highest and coldest area - its name already indicates it - of the Sierra Norte of Granada, at more than one thousand meters of altitude. One of the best Andalusian goat areas famous for its milk and cheeses. Of the wide range that they produce, this pure fresh goat’s milk cheese, with lactic ferments, is a jewel that has a long commercial life.
Brilliant white cheese without a rind. It has a clean, frank, milky taste with creamy and lactic endings reminiscent of yogurt and butter. Due to its neutrality and freshness, it is perfect for any drink, bread, fresh fruit or quince.
