Prior to the creation of the Ibores cheese PDO, the entire mountainous and peripheral area near Trujillo, in the northeastern area of Extremadura, was used to make this semi-aged goat’s milk cheese from local breeds covered with ‘pimenton ahumado de la Vera’ (smoked paprika from Vera) that gives a characteristic aroma and coloration. The entire area where this cheese has been made for centuries, and which hosts the weekly cattle market of Trujillo where it was traditionally sold, is called ‘Los 4 lugares’ (the 4 Places).
Cheese with medium flavor, creamy and aromatic with all the subtlety of goat's milk that grazes freely in one of the best pastures of Extremadura. The smoked paprika pairs it with young and fruity white wines, dry sherries with iodized notes or light beers.
