The traditional shepherd's cheese of the Catalan Pyrenees, it is a made-to-keep mountain cheese produced by Tros de Sort cheesemakers since their beginnings in 1995.
HISTORY

Serrat means “closed, blind and compact” in Catalan, a cheese with pressed and uncooked pate of medium-to-long aging,  that was produced  in the regions mountain farms to be stored. This Serrat is made with raw and whole cow's milk and has a minimum 3 months aging.

 
TASTING NOTES

The taste is developed but elegant, long, and buttery, with endings reminiscent of mushrooms and old walnuts and with aromas of pantry that pairs very well with short to medium age red wines.
