The medieval city of Trujillo is the commercial capital of Ibores, an artisanal goat cheese made in the “four places” in the southeast of Cáceres that has been sold since the 15th century in its weekly market, famous for its cattle and cheese transactions. Recognized with a PDO since 2007, Ibores is made in one of the most important Extremadura goat areas (the Villuercas) with two variants- natural or with a crust of paprika from La Vera.
It has an elegant and perfumed flavor due to the quality of Extremadura mountain pastures and the rind flavored with smoked paprika from La Vera. Ideal to accompany well-fruited rosés or white wines or with light beers.
