HISTORY
The basin of Valdeón is a great depression surrounded by high mountain passes in the southern foothills of the National Park of the Picos de Europa where the Cares River is born. Its secular isolation has been the architect of the maintenance of this unique blue cheese. With IGP since 1992.
TASTING NOTES
Medium flavor, very creamy and characteristic in which goat's milk gives it a slightly spicy taste and a whitish paste color. It pairs very well with generous sweet wines or with white wines fermented in barrels.
