The Torta del Casar is one of the most famous cheese DOP in Spain due to the quality and small milk production of Merino sheep and its coagulation with authentic vegetable rennet derived from pistils of wild thistle. A cheese originally made by shepherds and consumed locally that has become hugely well known in the last 40 years. In our case, an artisan cheese from the cheesemaker’s own livestock.
Washed rind and honeyed with intense aromas that protects a super creamy interior, unctuous and melting in mouth, with bitter and acetic notes. Ideal for fruity and dry white wines and aging sherries: Oloroso, Palo Cortado or Cream.
